A Refined Taste with Stock From Fresh Chicken and Seafood Woven Throughout
Originally a chef of Japanese cuisine, the owner of Otatsu recreates the taste of a famous Kasaoka Ramen shop, Saito, which has disappeared. This shop blends Japanese soup stock made from seasonal fresh fish and bonito with slowly simmered chicken bone. Special soy sauce is blended with double-soup of chicken and seafood creating a deep rich flavor. Red pepper and sesame seeds accent the taste.
It used to be that the shop’s “Kasaoka Hometown Chinese Noodle” was only available a few times a month. But now customers can enjoy it every day. It is ramen with a mystical taste that you have experienced somewhere, some time before in your past. You are highly encouraged to try it.
